Roasted Veggies
This has got to be one of my favourite things EVER!
A selection of roasted vegetables is so easy and great as a meal itself or a friend to a piece of protein.
Peel and cut up some sweet potato and boil till soft
Whilst they are boiling heat some coconut oil in an oven tray on 180 degrees
Once soft add your sweet potato to a variety of vegetables and cook for 30 minutes with garlic and pepper
My favourites to use are:
Cherry tomatoes
Zucchini
Capsicum
Red onion
Carrot
Broccoli
Mushroom
But the world is your oyster so get creative with new flavours!
Hummus
2 x drained cans of chick peas
2 tbs tahini
1 clove of garlic
1 tbs fresh lemon juice
1 tbs olive oil
1/4 tbs salt
4 tbs water
Process in a food blender and serve with veggies! Or for something a bit fancier why not toast some whole meal pitta bread slices to dip in
Stuffed Yellow Capsicum
I cut the top off of a large capsicum and scooped out the middle ready to bake in the oven for 20 minutes.
Whilst this was cooking I chopped up some mushrooms, red onion, baby spinach and garlic and cooked with mince.
Once brown I added tomatoes, oregano, salt and a little water to make my sauce.
I then stuffed into my capsicum, baked for a few more minutes and served on a bed of raw spinach
Chocolate Porridge
1/2 cup rolled oats
1/2 tablespoon raw organic cacao powder
2/3 cup unsweetened almond milk
In the microwave for 2 mins
Top with frozen berries and chia seeds!
Bunless homemade burgers on a bed of raw spinach
500g lean mince
8 mushrooms
1/2 red onion
2 beaten eggs
Garlic to your tastes
Salt and pepper
Chop and mix all together, mould into four balls and squash to make patties.
Cook on a low heat until brown throughout.
For your avocado topping:
1 ripe avocado
Tbs fresh lemon
Salt and pepper
Garlic
Blend and top with bacon on your pattie!
